TRUFFLES – are a type of pouched mushrooms which grow underground with tuberous, fleshy fruiting bodies of the Pezizales order. The truffles in question are entirely edible and considered to be a delicacy. The truffle does not look exceptionally beautiful with its strong resemblance to a potato bulb. A truffle can weigh as much as a kilogramme, or be as small as a pea. The most valuable types of truffle are the black French truffles or the Perigord truffles and the white Piedmont truffle. Only these mushrooms can boast of the distinctive truffle aroma.
It is very important to try and keep this aroma during the cooking process. This is exactly why they are added to a dish at the last minute and often raw. Truffles are cut into thin slices, for which special blades are used. It resembles a razor blade; hence gourmet chefs often use the term “to shave a truffle”. Truffles can also be boiled, cut into long strips, dipped in wine, and even steamed. You can just use them to add fragrance to a dish (for example, add sliced truffles to the dish 24 hours before cooking)
Truffles are the most powerful aphrodisiac which force any food lover to bow his head before a veritable whirlpool of amorous adventures.
